Chicken pasta Bake

This hearty and comforting chicken pasta bake combines tender chicken, rich tomato-mascarpone sauce, and a golden cheesy topping. A perfect all-in-one dish for a family dinner or casual gathering.
Ingredients
- 4 tbsp olive oil
- 1 onion, finely chopped
- ¼ tsp chili flakes
- 2 x 400g cans chopped tomatoes
- 1 tsp caster sugar
- 6 tbsp mascarpone cheese
- 4 skinless chicken breasts, cut into strips
- 300g penne pasta
- 70g mature cheddar cheese, grated
- 50g mozzarella cheese, grated
- ½ small bunch parsley, finely chopped
Instructions
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Sauté the onion for 10–12 minutes until soft. Add garlic and chili flakes; cook for another minute.
- Stir in chopped tomatoes and sugar, season with salt and pepper, and simmer uncovered for 20 minutes until the sauce thickens. Stir in the mascarpone and remove from heat.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat. Season the chicken strips and cook for 5–7 minutes until fully cooked and lightly golden.
- Preheat your oven to 220°C (fan 200°C) or gas mark 7. Cook the penne according to package instructions. Drain, then toss with the remaining tablespoon of olive oil.
- In a medium ovenproof dish, combine the pasta and cooked chicken. Pour over the creamy tomato sauce and mix gently to combine. Top with grated cheddar, mozzarella, and chopped parsley.
- Place the dish in the oven and bake for 20 minutes or until the top is golden and bubbling.
