Ice Cream Sandwich Cake

This Ice Cream Sandwich Cake is the ultimate no-bake dessert that your family will beg for again and again! With layers of ice cream sandwiches, whipped topping, fudge, caramel, and crunchy pecans, it’s sweet, creamy, and completely irresistible. Perfect for summer parties, birthdays, or any time you need a crowd-pleaser!

Ingredients

  • 24 vanilla ice cream sandwiches, unwrapped

  • 2 (8 oz) containers whipped topping (such as Cool Whip®), thawed

  • 1 (12 oz) jar hot fudge topping, warmed

  • 1 (12 oz) jar caramel topping

  • 1/4 cup chopped pecans (or to taste)

Instructions

Step 1: Prepare the Base Layer

In a 9×13-inch dish, arrange a single layer of ice cream sandwiches to cover the bottom.

Step 2: Add the First Layer of Toppings

Spread a layer of whipped topping over the sandwiches.
Drizzle with warm hot fudge and caramel sauce.

Step 3: Repeat the Layers

Add a second layer of ice cream sandwiches.
Top with more whipped topping, hot fudge, and caramel, finishing with a final layer of whipped topping on top.

Step 4: Finish and Freeze

Sprinkle the top with chopped pecans.
Cover the dish with aluminum foil and freeze for at least 30 minutes, or until set.

Step 5: Serve

Slice and serve straight from the freezer. Add extra fudge, caramel, or whipped cream if desired!

For clean slices, dip your knife in hot water and wipe clean between cuts. Want to customize? Swap in chocolate or peanut butter ice cream sandwiches or top with crushed cookies or mini chocolate chips!
